Food Philosophy with V Capaldi PaleoBOSS Lady

The "most healed" woman on the Earth


V's life has been centered around her being a BOSS. From being raised in a dysfunctional family that included an addicted mom & a war hero father who suffered from untreated PTSD, chaos had always been the norm in her my life. By the age of 23 in 1986 she was told she had an inoperable brain tumor & lived for almost 6 months believing her life was over. As luck would have it, the death sentence became a life sentence when she was told she had Multiple Sclerosis (MS).

 

V, tell us about yourself:

 

I am from Philly, 100% Italian and born under the sign of Taurus needless to say I am a Boss hence why my brand is called PaleoBOSS Lady. Grateful to be one of the most healed in the world from Secondary Progressive Multiple Sclerosis using only diet and lifestyle: no drugs, no doctors. I have dedicated my life to be of service to the community via the award winning "Taking it to the Streets Tour" where I live with strangers who invite me into their home to help them tap their miracle life & am founder of the brand PaleoBOSS Lady®. My life's greatest joy will always be that I am a mom to my pretty amazing daughter, Nicole. 

  

Tell us about your daily practices:

 

  • Dance like I am in the club about an hour after I wake up. Dancing gets my mind right and helps me to connect with my body so when I jump on the yoga mat I know where I need to give some extra yoga love. 
  • Yoga, yoga, yoga is my movement hero. 
  • Meditation
  • I find joy in each day.

 

What's your go-to recipe? Your favorite splurge food?

 

My go-to recipe is a big old bacon burger over greens and veggies with side of sweet potato fries. 
Splurge food: Any paleo desserts, especially Blondie's from Picnik.

 

What's your food philosophy? Do you follow a specific diet or have you created something tailored specifically for you? 

 

I am Paleo as a Wahls Warrior who follows The Wahls Protocol. In addition, I do intermittent fasting similar to the Bulletproof Diet. 

I have lived with MS for over 29 years but about 5 years ago MS delivered it's most devastating blows to my body that continued day after day. As a result my life was facing homelessness, institutionalization or I was strongly considering taking my own life. I had exhausted all of my resources fighting MS, marriages failed and by this time I was completely alone fearing every second of the day. I had tried being a vegetarian, vegan, the Swank diet & so much more with no help for MS.

 

At my most desperate time in my life as luck would have it I saw a TEDx by Dr. Terry Wahls called Minding Your Mitochondria where she shared how she developed a modified form of Paleo that took her from a wheelchair to walking due to MS. She explained The Wahls Protocol works at the cellular level to fuel the powerhouse of your cells, the mitochondria. Immediately I started doing exactly what she described and since becoming a Wahls Warrior I have stopped every symptom from MS and consider myself a walking miracle.

 

Top 5 things I learned from Dr. Wahls:

 

  1.  100% compliance of The Wahls Protocol is required.
  2.  Community is key to success.
  3.  Our gut holds the key to health.
  4. A purpose driven life is key to success.
  5. Resilience is something we all can work on.

 

These lessons learned from Dr. Wahls has not been the first time around the block hearing these truths. The Wahls protocol puts the power of healing in our control. 100%. Not a doctors control. We have to want it. We have to do the work ourselves. The end.

 

I am grateful to learn about how to respect my body. Doing this as a Wahls Warrior continues to relieve my body of the horrific symptoms of Multiple Sclerosis (MS) as my gut heals and my consciousness rises regarding what healthcare truly is.

 

What is your favorite way to move your body? How has exercise evolved for you over the years?

 

Exercise has evolved over the years due to MS because I used to work out in a toxic fashion. I thought that I needed to beat my body up in the gym to keep MS from winning. I was so wrong. 
I used to swim when I was trying to heal due to the water being so easy on your limbs yet offering a great workout. After swimming I jumped on the yoga mat about 20 years ago and have never come off. I did add spinning to the mix for about 10 years, but have since stopped as it was too hard on my body. Now I hula hoop daily. In addition I roll on therapy balls for self myofascial release which is a huge tool of wellness for me. 

 

Who do you look up to? Where do you find inspiration when needed?

 

Dr. Terry Wahls is my hero, mentor and dear friend. I find so much inspiration from her on a daily basis. 
 I also have a friend who wishes to be anonymous, but he is a retired NBA athlete who has believed in my work since the day we met. He gives me inspiration with how he views life and lives it, not to mention his path to the NBA and beyond. In addition he is a huge support for the work that I do inspiring my every move. No one has a larger role in my tour than him and I am grateful. 
 Ron Finley is known as the Gangster Gardener who has changed the narrative around food being accessible to all and has inspired me since before I was PaleoBOSS Lady. He continues to create a movement that inspires me and fuels me to keep helping others. 

 

If you could have a one-way flight to anywhere in the world, where would it be? Why?

 

Italy. Because my heart and soul are Italian and I am so proud of my culture. 

 

What is your favorite thing to eat or drink at Picnik?
When I am in Austin, which happens a few times a year, I eat at Picnik everyday. Literally not lying. Picnik was the first place in my conscious living journey where I could go to eat out. I remember the first time I went to the location on South Lamar I cried like a baby tears of joy that there was one place in America that got me. Then I took my first bite and sip and fell madly in love. 
I love every single coffee you have and literally go down the list so I can have a different one each day. Can't pick a favorite because I love them all so much it's ridiculous. 
 Blondie's are ridiculous and I may or may not have one everyday when I am in Austin ; )
The Harvest Hash with a scrambled egg is my jam. Literally I do not come up for air and devour this dish like it is my last meal on earth. 
Chocolate chip pancakes are my lovers and a side of the daily lemonade makes its a perfect match. 
If you had one piece of advice for someone just starting their wellness journey, what would it be?
Define your higher purpose filled with thoughts of self love and you can tap your miracle life without question. I believe in you.
